- Smoked boneless half ham with maple glaze pouch, 1 boneless half ham (about 1.9 kg) with its maple glaze pouch; carve about 1 kg for 8, glaze pouch set aside; the rest of the ham is leftovers
- Yellow onions, 4 medium onions (about 680 g, half the 3 lb bag), peeled and cut into 8 wedges each, root end left on
- Frozen sweet peas, 1 bag (750 g), straight from the freezer
- Salted butter, 1/2 cup (115 g): 3 tbsp for the peas, 5 tbsp for the mash
- Homogenized milk (3.25%), 1 cup (250 mL), warmed, warmed until steaming

- Dijon mustard, 2 tbsp
- Vegetable oil, 1 tbsp
- Dried thyme, 1 tsp
- Salt, 1 tsp, divided
- Black pepper, 1/2 tsp
Steps
Heat the oven to 160 °C (325 °F), about 10 minutes. Unwrap the ham, set the glaze pouch aside, and lay the ham flat-side down in the centre of a foil-lined rimmed sheet pan. Tent loosely with foil and roast 30 minutes, until the surface is warm and glistening.
Tip: The ham is fully cooked; you are only warming it through, so low heat under foil keeps it from drying out.
Toss the onion wedges with the oil, thyme, 1/2 tsp salt and the pepper. Scatter them around the ham, keep the ham tented, and roast 30 minutes more, turning the onions once, until they are soft and golden at the edges.
Tip: Leaving the root end on holds each wedge together so it turns over in one piece.
Meanwhile, put the potato chunks in a large pot, cover with cold water and add the remaining 1/2 tsp salt. Bring to a boil over high heat, then simmer over medium 15 to 18 minutes, until a knife slides through with no resistance.
Drain the potatoes, return them to the pot over low heat for 1 minute until they look dry and floury, then mash with 5 tbsp of the butter and the warm milk until smooth. Cover to keep warm.
Tip: Add the milk a splash at a time; you may not need all of it for a soft, spoonable mash.
Stir the glaze pouch together with the Dijon. Raise the oven to 200 °C (400 °F), lift off the foil and brush half the glaze over the ham. Roast 15 minutes, brushing on the rest halfway, until the glaze is bubbling and sticky and the centre reads 60 °C (140 °F).
Tip: The Dijon cuts the sweetness of the maple glaze and keeps it from tasting like syrup.
Lift the ham onto a cutting board, tent with foil and rest 10 minutes. Scatter the peas over the onions on the hot pan and return it to the oven for 6 to 8 minutes, until the peas are bright green and hot through, then toss with the remaining 3 tbsp butter.
Carve the ham into thin slices across the grain and spoon the pan juices over them. Serve with the mashed potatoes and the buttered peas and onions.
Tip: Wrap leftover ham tightly and refrigerate up to 3 to 4 days, or freeze slices for up to 2 months.
