Ingredients

On sale this week

  • Albacore tuna in water, canned, 2 cans (170 g each), drained well
  • 100% whole wheat sliced bread, 8 slices
  • Marble cheddar cheese, 150 g (about 1 1/2 cups grated), coarsely grated

  • Celery, 2 stalks, finely diced
  • Tomatoes, 2 medium, cut into 8 thin slices
  • Red onion, 1/4 small red onion, finely diced
  • Lemon, 1/2 lemon, juiced

From the pantry

  • Mayonnaise, 6 tbsp
  • Butter, softened, 1 tbsp
  • Salt, a pinch
  • Black pepper, 1/4 tsp

Steps

  1. Set an oven rack about 15 cm below the broiler and heat the broiler to high. Lay the bread slices on a sheet pan and lightly butter the tops.

    Tip: A toaster oven on its broil setting works just as well; do the slices in two rounds.

  2. Broil the bread 1 to 2 minutes, until the buttered side is golden and crisp, then flip the slices so the pale side faces up.

    Tip: Watch closely; whole wheat goes from golden to dark fast under a broiler.

  3. Drain the tuna well and flake it into a bowl. Stir in the mayonnaise, celery, red onion, lemon juice, salt and pepper until evenly mixed.

    Tip: Press the tuna against the can lid to squeeze out the water, or the melts go soggy.

  4. Spread the tuna salad over the pale side of each slice right to the edges, lay a tomato slice on top, and cover with the grated cheddar.

    Tip: Take the cheese to the crust so the edges melt and crisp.

  5. Broil on high for 2 to 3 minutes, until the cheddar is melted, bubbling and browned in spots. Rest 1 minute, then serve two per person.

    Tip: The tuna is already cooked; you only need the cheese melted and the filling warm.
